Personally, this is a 'dream' cheese. I love cheeses made from sheep's milk, but they're not as available where I live. Personally, I would prefer a blend that had slightly less goat's milk but truthfully, it was delicious. Very soft and creamy. I used some to top home made French onion soup. It was perfect.

We try different cheeses all the time. Because of where we live, I am limited to buying it at our local Sam's Club. Sometimes our commissary will carry new cheeses but are so pricey that I choose not to buy them. I tried the Manchego and did not like the taste at all. It was strong and overpowering. I like Goat Cheese but have never tried Sheeps cheese. I am definitely willing to give Iberico cheese a try. The packaging and the cheese itself just look so apetizing. However, I wanted to look for some reviews before spending so much money on it. I am now excited to give it a try as I have seen many good reviews on it. Thanks for this site.

Taste a wedge of Stilton Cheese - the real thing - and your life will be changed. Even if you never liked Blue Cheese, you will love this one!

It may seem odd that there is NO Farmhouse Stilton produced anymore, even though Stilton is indisputably considered the King of Cheese in Britain. Instead, the best Stilton is produced by specialists in large cheesemaking facilities in its home territory or legal domain in Leicestershire and Nottinghamshire (Robin Hood's territory).

The Stilton story began prior to 1720 and the "secret" recipe involves 2 curdling processes. The curds come from the cream from the evening milking, mixed with the full fat milk of the next morning's milking. In fact it takes 17 lbs. of milk to make one 15 lb. drum of Stilton! 200 years ago one of Stilton's respected cheesemakers, Mrs. Musson, said..."Stilton, with the exception that it makes no noise, is more trouble than babies."

When selecting Stilton, I also recommend that you look for the name Colston-Bassett - this cheesemaker is head and shoulders above the others - a stand-out among British Classic Cheeses. But in the U.S. it can be hard to find Colston-Bassett, so you would do well to select J.M. Nuttall or Cropwell Bishop as alternative choices. If you have never tried Stilton, you owe yourself and your guests, a treat. Today would be a good day to run down to your cheese shop and buy a wedge!

When I purchased mine, it had little spots of blue mold growing on it, but I didn't care and ate it anyway, mold and all! The tangy flavor provided by the goats milk blended nicely with the mold, which lent a flavor similar to blue cheese! Indeed, Iberico delivers greater complexity and more interesting notes than its relatively dull half brother, manchego. Maybe I should have taken it back, but it tastes yummers!

I am glad Alex correct the provenance of the cheese. Would like to add that Raclette cheese is for raclette. In the Valais, fondue is 70% Gruyere, 30% Emmentaler. When using Vacherin, the traditional Fribourg blend is 50% Vacherin, 50% Gruyere.

I have frequently enjoyed tete de moine, but last Christmas the cheese got put away in a cool moist place, and on retrieving it, it had become soft and crumbly, not producing florets, but just crumbs. However, these still have a powerful flavour.

Is there any way I can restore it to its original consistency? I tried leaving it in cold brine at room temperature for a day, but is was just as crumbly afterwards. Perhaps it should be heated in brine? But for how long, and at what temperature? Any other suggestions?

I work in a company that exports traditional and industrial french cheeses to the US and I tasted the Kunik during a stay in Boston. This cheese is just fantastic and I agree 100% with the description and comments above... This cheese is expensive but it is so worth it ! We should cut back our consumption of bland processed milk products and replace them by smaller quantity of quality products like Kunik. That would be much better for both health and taste.
